Great news from Noma chef Kristian Baumann! In partnership with René Redzepi and the Noma team, his dream to open a new restaurant becomes a reality. Restaurant 108 will open it’s doors in late spring of 2016. Why 108, you wonder? The name refers to its permanent address on Strandgade in Christianshavn.
Restaurant 108 inspiration
The kitchen at restaurant 108 finds its inspiration in the exciting developments that have happened to Denmark’s restaurant scene over the last decade. The chefs want to keep exploring and make the food culture their own; creating the essence of an urban restaurant, which has a proximity to nature, to farms, and to the vibes of the city.
Friends and family
108 will be a place for families to come together for a quick dinner on a Monday night, or for friends to sit down on a Friday evening for a longer meal, and really explore what the restaurant has to offer. Baumann and his team want to add value to the existing traditions of an already brilliant dining scene- and they hope to influence the Copenhagen kitchen.
But first a pop-up
From January 20th to April 16th 2016, while René and his Noma team are in Australia, the team of 108 will have the fantastic opportunity of taking over the Noma kitchen. The pop-up will be open for dinner only from Wednesday to Saturday, and feature an a la carte menu.
